Caramel pudding rainbow cake and baklava (19 Jan 2013)

Caramel pudding rainbow cake
Heat the sugar till caramelised, and allow to cool
Prepare the meringue and batter
Strain the mixture into the cooled caramelised sugar
Preparing different colours
Pour in equal portion one at a time
Sending it into the oven!

Baklava
Ingredients
Melted butter and boiling sugar in water
Laying Fillo pastry on tray, while brushing with melted butter. Sprinkle grounded nuts and repeat.
Cut the baklava before sending into oven
Pour syrup onto the baked baklava
Sprinkle ground nuts and allow it to soak

Sambal Chicken and Chilli Crab (19 Jan 2013)
Very nice kitchen at Prima Taste. It has LCD screens to show and capture every cooking step.

Preparing the ingredients
Stir fry the boneless chicken meat a little
Add in the pre-mix sambal paste
Stir
Sambal Chicken done!

The crabs
Insert the knife through the back to kill the crab
Cut of the strings, be careful of the pincers.
Clean the crab, remove the unwanted organs and ready for the wok.
Stir fry the crab a little
Drain off excess oil
Back to wok, add in chilli paste, water, starch and beaten eggs. Bring to boil.
Chilli crab done!
Yum!
A simple feast!

Chocolate marble pound cake
Eggs
Butter, sugar, glycerine, vanilla paste
Slowly adding in the eggs bit by bit
Different layers of mixture
Ready for the oven!
Baking!

Fruits & nuts Biscotti
Preparing the fruits and nuts
Mixture done
Shaped into log shape and sent into the oven
Cut the log into slices, send them back to bake till golden colour
Fruits & nuts Biscotti done!

Marshmallow
Boiling sugar + glucose
Adding the boiling sugar to the whipped up egg white
Pipe onto cooked corn flour before allowing it to set in the freezer
Dust with corn flour and cut with scissors.
