The crabs

Crabs 2-ways by Chef Michele Ow

Making the Mantou, starting with the paddle attachment: Hongkong Flour + Salt + Sugar + Vegetable Oil + Baking Powder + Yeast + Milk.

After mixed with dough hook

Roll 


Roll into logs and cut into mantou


Flower shape: 5-pieces of circles, brush with a little water, then roll.


Roll the flower, then cut into half


Before: Allow the dough to proof, thereafter to steam

Heat butter and fry garlic + shallots

Crab + Oyster sauce + Black Sauce + sugar + water + coarse pepper

Black Pepper Crab done

Chilli Crab: More straight forward - Just make everything in. Ketchup + water + sugar + cornflour + Miso + Garlic + Chill sauce + Lime Juice
